In the estate Los Cerrillos, in the Valle del Guadiana and under the shadow of the Castle of Peñarroya, the Montalvo Wilmot family pampers each strain of Tempranillo, Cabernet Sauvignon and Syrah to produce wines following an ancient tradition that starts with the viticulture done when Los Cerrillos was a Dignity center of the Great Priory of St John of Jerusalem.

The winery Montalvo Wilmot is an amazing symbiosis of tradition and modernity elements from La Mancha and Bordeaux keeping the best of both regions recognized for the quality of their wines.

Our very old and renovated cellar, that comes from the old times of the Great Order of St. John of Jerusalem, pursues innovation in the wine industry, where quality is our main goal, assembling perfectly tradition and technology. It indeed reflects our effort and consistency, not only through the very positive reviews appeared in journals and ritics by renowned tasters, but also by the long list of awards received in many prestigious international competitions.

The vineyards at Finca Los Cerrillos are crossed by the Guadiana River. They are located beside the reservoir of Peñarroya, at an altitude of 695 meters, surrounded by hills that topographically delay the vegetative cycle avoiding the night high temperatures that favour very significantly the polyphenolic maturation of the grapes, and maintaining very low rainfall volumes and strong ventilation.

Soil is basically out of Limestone. The most important rock is marl, a mixture of clay and limestone unbound. Presents loam with pH around 8.

At the Estate Los Cerrillos, we have a continental Mediterranean climate, characterized by very warm summers and very cold winters, with temperature fluctuations that can sometimes reach 45 ° C in summer and -15º in winter, and with a wide temperature range both between day and night throughout the year, clear skies 80% of the year, that often exceeds 2500 hours of sunshine per year, with late frosts in spring time, forcing to install anti-frost systems, as one of the few operating in Spain and unique in Castilla La Mancha, to control strong spring frosts and in times of harvest control the morning dew to dry the vines.

Los Cerrillos differs significantly from the surrounding areas because of the proximity of the Guadiana river, its rainfall is well above the rest of Castilla la Mancha while the temperatures are not as extreme as those of the surrounding territories in the south and west. We can confirm that we have a difference of vintage with the rest of the area of ​​about 15 or 20 days of later harvest.

The processing techniques in which the grapes vinified are not pressed, consist in using only gravity techniques allowing us to obtain our famous "Free Run Wines",  obtaining a lower than normal yield in hl/ha that is between 62% and 68%. Wines are clarified naturally through different racking techniques.

The wines have medium intensity mineral influence, preserve the fruity or floral aromas very vivid and intense, even with the time. The y keep their intense colors and taste, being balanced and round.
Because of everything previously explained, our wines can reach levels of more than 14% Alcohol, that together with the adequate acidity level makes this alcohol level perfectly integrated.

Wines have a polyphenol content of up to 80, very aromatic and well colored, reaching 18 colour points as well as an anthocyanin content of up to 700.

The winery originated in the late nineteenth century and has been restored and renovated adapting the latest and most innovative technologies, blending perfectly tradition and dynamism. It has a production facility with temperature control stainless steel tanks, a storage Warehouse and an aging cellar with more than 200 barrels of American and French oak where our best wines rest over the necessary time.

It is important to remind that the grapes vinified are not pressed and only follow a gravityprocess in order to obtain our "free run wines" or "vin de goute" giving very low yields, thus of very high quality.

Varietal wines are made in stainless steel tanks with a long cold maceration that lasts between 2 to 5 days at 10 to 15 ° C. It is important to point out that the grape harvest begins at 5 o'clock in the morning and ends at 11 am in the morning to avoid to the grapes the high temperatures, thus ensuring proper cold maceration, fermentation maceration followed by 1 to 2 weeks at temperatures between 18 to 24 ° C. until completion of alcoholic fermentation . Our wines are clarified naturally with several rackings and no chemicals are used.

The wines intended to be aged are produced in stainless steel maceration/fermentation tanks at temperatures between 25ºC and 30ºC and kept there from 15 and 25 days. During this time takes place the process called "délestage", that is a technique that facilitates the colour and polyphenols extraction from the hat created in the tanks during the red wines vinification.

The wines remain the necessary time in the barrels, that, every 6 months will be emptied, for oxygenation of wines, clean of the barrels and to ensure perfect microoxygenation of the wines.

Then, depending on the type of wine, and once the malolactic fermentation aided by "batonage" (shaken lees with nitrogen) is completed, the wines are naturally clarified through different rackings, and introduced into French and American oak 225 liter barrels, for ageing between 3 and 24 months. Barrels have a maximum usage of six years. After bottling, wines will finish themselves during a final ageing in bottle that lasts from 1 to 24 months depending on the wines.
